A Tender Chicken Taco

As with beef, boiling creates very tender chicken. This is a great change from standard chicken meals. Enjoy!

  • 1 ¼ lb. boneless chicken breast
  • Water as needed
  • 1 tsp. cumin
  • 3 tbsp. chili powder
  • 2 garlic cloves – crushed
  • 1 medium yellow onion – chopped in strips
  • 2 medium green bell peppers – chopped in strips
  • 1 can whole tomatoes
  • Your favorite salsa or hot sauce
  • 8 corn tortillas

Garnish

  • Lettuce – chopped
  • Tomatoes – chopped
  • 2 limes, cut in wedges for serving
  • Cheddar cheese – grated
  • Your favorite taco sauce
  • Black beans

Place chicken in large skillet. Fill with water until chicken is covered. Bring water to boil then reduce heat to a light simmer, cover, and cook for 1 hour. After cooking, immediately skim fat off of broth and store. Allow chicken to cool and cut into long thin strips. Blend tomatoes, chili powder, garlic, cumin, and oregano in a blender. Put blended mixture, chicken, and broth in sauce pan. Bring mixture to a boil, reduce heat to light simmer; cover, and cook for 15 – 20 minutes. Sauté onions and bell peppers in lightly oiled sauce pan. Add chicken and cook mixture for 3 minutes. Cook tortillas in the Taco Toaster. Scoop mixture into the shells. Top with lettuce, tomato, cheese, and garnish of your choosing. Serve & enjoy!

Fish Taco

The beans add a nice twist to the normal white fish taco. There is lots of room to spice this recipe up. Habanero for the adventurous; or a tangy salsa. Play around. Enjoy!

  • 1 lb. cod or white fish fillet of your choice
  • Olive oil
  • 1 white onion
  • 2 green peppers- chopped into bite size pieces
  • 1 clove of garlic- crushed
  • 1 can of pinto beans
  • ¼ cup tomato sauce
  • 1 tbsp. of hot sauce
  • 2 serrano chilies- cut in small circles
  • 8 corn tortillas

Garnish

  • Iceberg lettuce – chopped (cabbage is an alternative)
  • Jack cheese – grated
  • Favorite taco sauce

Sauté onions, green peppers, serrano peppers, and garlic in large skillet until the onions are partially transparent. Stir in beans, hot sauce, and tomato sauce. Allow to simmer under medium heat. Cut fish into bite size pieces. Place fish into another skillet and cook with mix until done (approximately 6 minutes depending on size). Cook tortillas in the Taco Toaster. Scoop fish into taco shells. Top with bean mixture, lettuce and cheese. Add taco/hot sauce/salsa per your preference. Serve & enjoy!

Beef Fajita Tacos

Fajitas are very popular and great for large crowds or outdoor occasions. Guests will enjoy building their own tacos, thus reducing your prep time. This recipe is specific for beef.

Marinade

  • ¼ cup of beer(not light beer)
  • ¼ cup of olive or canola
  • 1 sliced sweet onion
  • 1/3 cup fresh lime juice (two limes)
  • 2 garlic cloves – minced
  • 1 tbsp. chili powder
  • 1 ½ tbsp. fresh cilantro – finely chopped
  • 1 tbsp. of Worcestershire sauce
  • 1 ½ tsp. of cumin – ground
  • ½ tsp. of cayenne
  • ½ tsp. freshly ground black pepper

Ingredients

  • 1 ¼ to 1 ½ lb. round steak
  • 1 large red bell pepper – cut in 2 in. strips
  • 1 large green bell pepper – cut in 2 in. strips
  • 1 large onion
  • 12 corn tortillas

Garnish

  • Cheddar cheese – grated
  • Sour cream
  • Fresh avocado or guacamole

Place all the marinade ingredients in large bowl and mix thoroughly. Place meat & marinade in freezer bag, remove air, seal, and rub in marinade with hands. Refrigerate for 6 hours. Place peppers, onions, and pour half the marinade from freezer bag into a bowl. Cook meat on grill flipping once during cooking. Pour remaining marinade on top of meat after the initial flip. Put peppers, onions, and marinade in a lightly oiled pan and cook rapidly under high heat, stirring constantly. Cook until onions are soft but not quite transparent. Cook tortillas using the Taco Toaster. Cut cooked meat into thin 2 to 3 inch strips. Mix steak, peppers, and onions in a bowl. Then scoop mixture into the taco shells. Top with cheese and other garnishes. Serve & enjoy!
